Best Barbecue Chicken in the Slow Cooker

Some days are easier than others.  You may have started the day thinking you would grill chicken to end up grazing popcorn and macaroni and cheese. That is how Sunday went. Admittedly, it was oil popped popcorn with no adds chemicals and my creamy homemade gluten-free macaroni and cheese with bacon add, but still not the vision of eating BBQ and tangy sides.

Monday was not much better with a baby who could not bring himself to nap until early evening when he finally cried himself there riding around on my chest because I needed to get dinner started or it would be another  junk  food night.   It had to be a start and leave dinner, however, because I still had work to do and a cranky baby on board.  So, there I was with #babysaty strapped to me in my Infantino Sash Mei Tai carrier, which I love more than anything, alternating between sleeping and waking up screaming, making my sauce for slow cooker BBQ chicken, which while obviously not a quick dinner, could be completed in three hours on high after eight minutes of my time.

Best Barbecue Chicken in a Slow Cooker (Dinner)

  • 3 boneless chicken breasts (2-3lbs)
  • 1/3 cup apple cider vinegar
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 2 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp dried dill
  • 1/3 cup brown sugar
  • 1-1/4 cup barbecue sauce
  1. Place chicken breasts in slow cooker  and salt lightly.
  2. Put vinegar, oil,and herbs in a mixing bowl and which until emulsified.
  3. Add brown sugar and stir until dissolved, stir in barbecue sauce.
  4. Pour over chicken.
  5. Cook on high 3-4 hours or low 6-8.
  6. Shred and serve on salad, buns, or tortillas with coleslaw, beans, corn, or whatever you fancy.

Tangy BBQ Sauce (Basics, Sauces)

  • 1 cup reduced sugar ketchup
  • 2 tablespoon hot sauce
  • 1 tablespoon mustard
  • 2 teaspoon worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon cumin
  1. Mix well over low heat.
