I invented a new biscuit recipe a while back because most paleo biscuits are lame, either being grainy for the almond flour or tasting too strongly of coconut (though this is good for pastries). That weekend I specifically needed them to be nut-free, so I had to come up with another solution.
They looked and smelled delicious, but had some minor flaws, so I present them here with the updated version, correcting the inhibited rise and weird sponginess (due to it being my first time using guar gum).
Paleo Nut-Free Biscuits (Basics, Breads)
- 2 cups arrowroot powder
- 1/4 cup coconut flour
- 1/2 tbsp guar gum
- 1 tbsp baking powder
- 1 tsp salt
- 1 tsp honey
- 8 tbsp butter, cubed (or solid-state ghee)
- 3 tbsp apple cider vinegar
- 2 tsp garlic greens or other fresh herbs, chopped (optional)
- 1 cup coconut milk
- Preheat oven to 350°F.
- Mix all dry ingredients. Add honey, and butter. Mash until butter is mixed in to tiny beads. Add herbs of choice.
- Slowly stir in milk and apple cider vinegar, folding dough. Roll out and cut or drop on pan or in 12-cup muffin tin.
- Bake 12-14 minutes.
Pro-tip: Do not use coconut oil unless you seriously intend to serve these as the base for a dessert.
